Flourless peanut butter cookies
Base recipe:
1 cup peanut butter, creamy, all natural
1/8 cup sugar (I used sugar in the raw)
1 egg
Be aware – if you like sweeter cookies, add 1/2 cup sugar. These are not super sweet, and I liked them that way.
To make the chocolate coconut version, I added:
1 tbsp coconut oil
1 tbsp cocoa powder
1 tsp cinnamon
1/2 cup shredded unsweetened coconut
Mix all ingredients then spoon onto baking sheet (or roll) and bake for 15 minutes at 350F. Let cool and then drizzle with melted chocolate if desired.

I actually tried, and they didn't cook correctly because the sugar is what solidifies them. Otherwise you just get weird warm PB!

If you want to make flourless PB cookies with stevia, this recipe seemed to work well for me. They are a little crumbly but they stay together and are very good!
Peanut Butter Cookies
1 Cup Organic Peanut Butter (works best if already refrigerated)
1/8 cup or 12 packets of Stevia (Depends on how sweet you want them)
1 egg white
1/8 cup Natural Apple Sauce
1 tsp Pure Vanilla Extract
½ tsp Baking Powder
Mix all ingredients together. Roll into 1 inch balls and place on baking sheet that has been sprayed with olive oil cooking spray. Press down with spoon or fork. Makes 15 cookies.
