Low carb buns

Inspired by April’s low carb buns :)

2 eggs
1 heaping tbsp greek yogurt
salt
1/2 tsp cream of tartar
1/2 tsp baking powder

Using a hand mixer, mix the egg WHITES, cream of tartar, and baking powder until firm peaks form. Then with a fork, whisk the egg yolk, salt and greek yogurt together in another bowl. Gently FOLD the two ingredients together with a spatula, then dollop onto either muffin tins or mounds on a pan. Make sure to really evenly coat the pan with cooking spray- these stick really bad.

Bake for 10 mins at 400F.

You can toast these too after cooking!

    Can you tell me what these taste like?

      Hi Kelly, these are very light and airy with a slightly eggy taste. I like to re-toast them after i've baked them the next day. They are very delicate so they wouldn't be good for a sandwich, but they're a nice edition to a meal.
