Mom’s egg casserole

Serves 2

4 whole eggs
2 egg whites
salt and pepper to taste
1/2 lb ground turkey, sausage, or beef
Chopped frozen spinach (or any other veggie you want)
Mixed 2% mexican cheese

I first whisked the eggs, egg whites, and salt and pepper very well.  I poured the eggs into the casserole dish and then added about 1/2 lb of grass fed finished beef evenly. I sprinkled 1/2 a cup of frozen spinach that was defrosted in the microwave. I topped the whole thing with 1/2 cup of 2% mexican cheese. Bake for 45 mins in a 350F degree oven, or until cheese turns golden. So good! Enjoy.
