Christina’s Enchiladas
1 package of Trader Joe’s low carb tortillas
1 bottle of Trader Joe’s enchilada sauce (or any you like. you won’t use the whole thing)
1 jar of low/no sodium marinara sauce
20 oz of chicken breast
1.5 cups of broccoli (frozen or raw)
3/4 cup light mixed cheese
Spices: garlic powder, chili powder, and anything else you want
Start by pulsing some broccoli (I used raw) in your food processor, or just chop finely.

Then saute or microwave the broccoli until tender. I threw it in a pan for about 3 mins then mixed it it with 20 oz of boiled and shredded chicken. To make this chicken, I just put it in a pot of boiling water for about 15 mins. Then I drained it, let it cool, and shredded it with my hands.
Add 1/4 cup enchilada sauce and 1/4 cup marinara sauce. Mix well and add the spices of your choice. I put about 1/2 tsp of garlic powder and 1/2 tsp of chipotle chili powder. Then add 1/4 cup shredded cheese and mix well.

Take your tortillas and stuff them with this much of the filling.

Roll up and arrange

In a separate bowl, add 1/2 cup of this stuff…

With 1/2 cup of this stuff…

And the spices mentioned above. Then mixed well and pour over your enchiladas. I like them drier, but you could add more sauce if you want it.
Then cover the enchiladas with 1/2 cup of cheese.

Serve with greek yogurt “sour cream”. YUM!!
