Christina’s version of Jamie Eason’s chocolate protein bars
This is based off of Jamie Eason’s chocolate protein bar recipe…these are AWESOME. YOU MUST MAKE THEM.
1 cup (90g) oat flour
1/4 cup coconut flour
2 scoops double chocolate all natural designer whey
½ tsp Baking Soda
¼ tsp Salt
3 tbsp (14 g) Baking Cocoa
3/4 cup egg whites
4 packets of no carb stevia (NuNaturals)
8oz Berry flavored Baby Food (I used pear raspberry)
2oz Water
Preheat oven to 350 degrees.
Mix dry ingredients and wet ingredients separately. Then mix together and make sure there are no lumps (I should have mixed longer!). Bake in a PAM-sprayed pan for 25 mins at 350F. Makes 16 bars and the serving is two small bars.

We don't get coconut flour over here (or peanut flour!) That sounds like I'm in the third world, I'm not, I'm in the UK
Can I sub anything for the coconut flour, or leave it out? Add more oat/oat flour?
If any UK readers have ever found a source of peanut flour, please post here! I would love to try some!

you definitely could use oat flour or any flour instead! I just used what I had on hand. PS my coconut flour is from http://www.bobsredmill.com/ and they ship internationally if you do want the coconut flour (although I bet its expensive!)
Thanks! Yeah I bet it is expensive – Whole Foods over here gets enough of my cash as it is! I do wish I could find peanut flour here though – it's really weird that nowhere seems to stock it
amazon.co.uk sells coconut flour and i've bought a bunch of it at my local health food store, IN the UK so it's mighty possible
(no dice on peanut flour though, I heard something about it being banned)
