Pumpkin Loaf Bread (low carb, low sugar)
100 g (3/4 cup) oat flour (I use Red Mill gluten free oat flour)
70 g (3/4 cup) almond meal (Trader Joe’s Brand)
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1 tsp pumpkin pie spice
3 eggs
1/4 cup Nunaturals stevia baking blend (adds a lot of fiber!!)
20 drops of vanilla stevia ( you could just use one sweetener if you want – i just love this vanilla stevia)
185 g (3/4 cup) canned pumpkin
10 g (1 tbsp) extra virgin olive oil
45 g (1/4 cup) chopped baking walnuts
30 g (2 tbsp) raisins
Preheat oven to 350F. Mix all dry ingredients together well, then add all of the wet ingredients (they do not need to be pre-mixed). With a spatula, spoon into a loaf pan that has been sprayed with nonstick spray. Sprinkle walnuts on top and put in oven for 50 mins, or until a toothpick comes out clean. Enjoy!!
