Healthy chicken parmesan
2 chicken breasts (12 oz)
1 egg
Low sodium marinara sauce
Low fat mozzarella cheese
Breading:
1/4 cup almond flour/meal
1/4 cup oat flour
1 tsp basil
seasoned salt and pepper
1/2 tsp garlic powder
Start by whisking one egg. Mix all the breading ingredients separately. First dip chicken in egg wash, then coat with breading. Put in 400F oven for 20 mins on one side, then flip and cook for 10 mins on the other side (or until fully cooked). Then broil chicken for about 2-3 mins on each side. When the crust is nice and brown, top each chicken breast with 1 tbsp of low sodium marinara, and 1 tbsp of low fat mozzarella cheese. Broil for 3 more minutes, or until cheese has melted.
