Nutritious Seafood Cioppino (soup)
1 red onion, diced
2 carrots, diced
2 celery stalks, diced
1/2 cup of diced baby bella mushrooms
1 tbsp EVOO
1 tbsp tomato paste
1 tsp chili powder
1/4 tsp chipotle chili powder
1/4 tsp syrian hot red pepper (or any hot pepper spice)
1 tbsp dried basil
1/2 can of low sodium chicken broth
1 cup of water
2 cans of diced, no salt added tomatoes
about 20 large shrimp (I bought the frozen cooked variety from Trader Joe’s)
1 can of crab meat (I get it from Trader Joe’s)
Salt and pepper to taste
Start by sauteing the onion, celery, carrots, and mushroom in 1 tbsp EVOO on medium heat. When all veggies are tender, add tomato paste and all the dried spices and mix quickly to distribute and refresh the spices with the heat. After about 30 secs, add the 2 cans of tomatoes (do not drain), the chicken broth, and the water. Add more water if you like the soup more watery.
Then add the cooked shrimp (or raw) and 1 can of crab meat. Add salt and pepper to taste…I added about 1/4 tsp of seasoned salt. Let simmer on low for 15 mins to 1hr. Enjoy!
