Egg muffins

Inspired by Maria’s post here :)

3 eggs
1/2 cup frozen spinach, thawed
3/4 cup egg whites
salt and pepper
mozzarella shredded cheese
nitrite free turkey breast, low sodium is preferred

Preheat your oven to 400F. Spray your muffin tin with nonstick spray, and push one slice of turkey into each muffin hole. Mix eggs, egg whites, spinach, salt and pepper, and distribute evenly in each turkey hole. Then top with a small sprinkle of cheese. Bake for 25-35 mins, depending on how brown you want the muffins. Pop out and enjoy!! Makes 6 muffins. I would probably have 2 with some oatmeal for one serving.

    Hi! These remind me of Passover popovers….but yummier! Mine are in the oven right now and I can't wait to eat them!
