Antioxidant Berry Muffins

60 g of quick oats (about 2/3 cup) – you could sub coconut flour or almond flour here for a low carb version
125 g of egg whites (about 3/4 cup)
100 g cottage cheese (about 2/3 cup)
70 g of apple sauce, unsweetened, all natural (1/3 cup)
1/2 tsp baking powder
1 tbsp cinnamon
1/4 tsp salt
2 tsp of Salba (ground white chia seeds)
1/4 cup defrosted mixed berries (drain the water after microwaving them)

Preheat oven to 350 F. Put all ingredients except mixed berries into a blender and blend well until cottage cheese is completely blended. Aliquot into 6 muffins. Add 1 large tsp of berries to the top of each muffin and mix in slightly. Bake at 350 F for about 20-25 mins or until fully cooked.

Makes 6 muffins!

    Mmm looks tasty! I've used cottage cheese in savory muffins before, but never in berry muffins. Blending the batter is a great idea!
