Low carb cocoa coconut bites
This is mostly raw and 100% vegan, and could be made entirely raw with cacao powder.
1 cup unsweetened bulk shredded coconut (I get it from whole foods)
1 tbsp raw virgin coconut oil
1 tbsp unsweetened cocoa
1 packet no carb stevia (Nunaturals)
Start by putting coconut and coconut oil in food processor and blend for about 2 mins, until it is moist and creamy but not coconut butter. Add in the cocoa and stevia and pulse to mix.
I used a melon baller to spoon out this liquid mixture in to 12 cookies on parchment paper, then pop in the freezer for 15 mins.
They’re ready to enjoy after! Store these in the fridge for up to 1 month!
