Tone it up protein salad
This is adapted from the tone it up recipe for tempeh salad
Makes 2 servings
About 1/2 lb of frozen shrimp, defrosted (cooked already)
1/2 cup of grated carrot
1/2 cup of grated cucumber
1/2 a lemon
1 tsp of raw real honey
salt and pepper
1 tsp dried basil
Rinse your shrimp and take tails off if they remain. Lightly saute in a little EVOO for about 1-2 mins on each side, just to give them a little more flavor (this step can be omitted). Mix all ingredients together once the shrimp have slightly cooled.
I topped it with some guacamole!
