Beef and water chestnut lettuce wraps
Makes 2 servings
This is perfect for meal 4 or 5 of the tone it up diet plan.
10 lettuce leaves – washed and dried
1/2 lb of grass fed beef (you could sub chicken, ground turkey, tofu, or tempeh)
1/2 cup of shredded carrots
1/2 cup of chopped mushrooms
1/2 cup of diced water chestnuts (about 20 water chestnuts)
1/4 cup slivered almonds
1 tsp coconut aminos (or soy sauce)
1 tbsp low sodium teryaki sauce
2 tbsp apple cider vinegar
1/2 tsp chipotle chili powder
1/2 tsp garlic powder
First brown the grass fed beef and rinse off any extra fat if you desire to. After meat is cooked, put aside while you begin to brown mushrooms in the same pan. Once mushrooms are browned, add all ingredients in except almonds (including beef). Stir well on medium heat and let the mixture reduce for 5 minutes while stirring occasionally. This will allow the mushrooms and water chestnuts to absorb some of the flavors. After five minutes, turn off heat and top with slivered almonds. Serve in lettuce leaves.
