Whole Foods kale salad
1 head of kale
1/2 pint of blueberries
1/4 cup of raw cashews (raw will taste better than cooked – they’re sweeter and softer)
1/2 carrot, grated
1/2 of a red onion
1 tbsp EVOO
Chop kale finely – the thinner the sections, the easier to eat and the more tender it gets. Chop red onion into ribbons/slices. Layer whole salad (all ingredients) then massage 1 tbsp of EVOO into the salad. This will really tenderize the salad. Let the salad sit in the fridge overnight and serve for the next couple days! It will last in the fridge since kale does not wilt very easily. Perfect salad for the week!
