Mango basil salsa
1 ripe mango
3 roma tomatoes
2 tbsp of diced onion
10 to 12 leaves of basil
2 tbsp lemon juice
1/4 tsp of salt
Chop mango and tomato to large chunks and put in food processor. Add all ingredients and pulse about 10-15 times until the consistency you like. Feel free to substitute basil with cilantro or other fresh herbs. I like to serve it on top of beef lettuce wraps!
