Protein pancakes
Hey ya’ll,
I make these at least 2 times a week, and alternate the carb source. Enjoy!
UPDATED BELOW
1/4 cup peanut flour OR almond meal OR oat bran OR old fashioned oats
1/4 cup egg whites
1/4 cup lowfat cottage cheese
1/2 – 3/4 scoop Mr. Jay Robb protein powder
1/2 tsp baking powder
1/2 tsp cocoa powder (if you want the chocolate version)
Any variety of fruits to cook inside or outside
You could also add nuts or coconut inside the pancakes.
Top with nut butters, real maple syrup, honey, or fruit!
UPDATE – FAVORITE RECIPE (higher amount of food to fill me up, but you can use the proportions above if you want to make less)
1/6 cup coconut flour (i just scoop out half of a 1/3 cup)
1/6 cup oat flour (its gluten free and you can find it at whole foods…or just grind up some oats!)
1/3 cup egg white (add extra if the batter is too thick – this depends on your protein powder)
1/3 cup cottage cheese, 2%
1/2 tsp baking powder
1/2 scoop protein powder
Blended in my magic bullet. Cooked the pancakes in the coconut oil i skimmed off the top of my coconut butter. Topped these bad boys with coconut butter, little honey, and strawberries.

So I my husband has watched me eat your protein pancakes for weeks now. He proclaimed it disgusting. Then out of the blue yesterday he asked me to make him some chocolate ones. I was like really?! He wanted to see if they were really THAT good. He LOVED THEM! He ate his words and even ate them again this morning!

Can you substitute the cottage cheese with anything else? I despise cottage cheese and although you may not be able to taste it, I won't even think about trying it because my level of hate is so high. HAHA Do you think increasing the amount of egg whites would work?

Lol Kim at your CC hatred! No worries – greek yogurt works too! You could use more egg whites but you'll lose the nice texture of these. I guess you could try ricotta cheese as well if you wanted.
