Almond meal chicken
1 lb of chicken breast tenders
Marinade:
1 tsp dijon mustard
1 tsp sundried tomato paste
1/4 cup egg whites
1/4 cup water
Dredge:
1/2 cup almond meal
1 tsp chili powder
1 tsp Mrs. Dash or mixed spices
dash of seasoned salt to your liking
Marinate the chicken for 1 hour in the marinade, then dredge in almond meal mixture. Back at 400 F for 20 minutes or until lightly browned and cooked through. Enjoy with some of my greek yogurt dressing.
