Green soup

Kale and broccoli green soup:

2 giant handfuls of Kale (2 cups), chopped
1 cup of frozen broccoli, microwaved for 2 mins
1 large onion, either chopped or sliced
2 ounces goat cheese, crumbled
1 tbsp Parmesan cheese
1 medium potato
4 cups low sodium chicken broth
1/2 tsp cayenne pepper
1/2 tsp seasoned salt (or to your liking)
1/2 tsp garlic powder

I started by slicing the onion and putting it with about 1 tbsp of extra virgin olive oil to brown (move constantly to avoid burning). You want the onions to be translucent and slightly brown so that they caramelize. I also chopped one small and one extra small potato into bite size pieces (skin on).

So you will have one pan with onions…

And another pot with the simmering chicken broth on medium, the broccoli, potato, and kale. No need to add spices yet.

Once the potatoes and greens are cooked and the onions are caramelized, put everything in a blender….

Blend on high for about 30 seconds or until smooth. I took a video of the Vita-mix doing its job!

After blending, add spices and cheeses. Blend for 10 more seconds to mix. I served it with 10 large shrimp on top!
