Bacon frittata
12 eggs
1 cup frozen spinach, defrosted
1/2 cup diced onion
1/2 cup diced green pepper
12 strips of bacon, cooked and diced (I cook at 350F in an oven)
salt and pepper to taste
Simply whisk all the ingredients together and put in a greased pan. Bake at 350F for 30 mins or until brown. I broiled for about 2 minutes at the end to brown the top.




It is awesome with some dark greens mixed with balsamic vinegar!


Or for breakfast with some sauteed bell peppers and onions. Topped with guacamole and pico de gallo.
