Paleo pumpkin pancakes
1/2 cup blanched almond flour
1 cup egg whites
1.5 scoops protein powder ~ 30 g protein (optional…you could add more almond flour. I used unflavored whey protein)
3/4 cup Libby’s canned pumpkin (I don’t know why but its much tastier than the organic canned pumpkin)
1/8 tsp or 1 packet of stevia
1/8 tsp dried ginger
1 tsp pumpkin pie spice
Mixed well, let stand for 5 mins. Cook on medium low in grass fed butter. Do not over cook since they will get rubbery. NOM!!
Makes 2 servings…(6 pancakes for the whole batch).
3 pancakes = 284 cals, 11g carbs, 15g fats, 30g protein!
