Nom bites
12 medjool dates (does not need to be soaked)
1/2 cup shredded coconut, unsweetened
1/4 cup chocolate chips
1/4 cup walnuts
1/4 cup pecans
1 tbsp coconut oil
pinch of salt
1/2 tsp of vanilla extract
Throw everything in the food processor and blend for about 30s until smooth but you can still see distinct components. The chocolate chips don’t really break apart. Roll into balls and you can eat them right away or what until they’re chilled and a little harder.
