Lebanese avocado salad

2 roma tomatoes, diced
3 persian cucumbers, diced
3 whole avocados, diced
1 orange or yellow bell pepper, diced
1/4 of a purple onion, diced

Dressing:

3 tbsp extra virgin olive oil
5 tbsp lemon juice
1 tsp sumac (optional – this is a middle eastern spice that is lemony)
3/4 tbsp crushed garlic (I get the jar from Trader Joe’s)
1/2 tsp pepper
salt to taste (I used a generous pinch of sea salt)

Try to cut all veggies to the same size, and add the avocados after you’ve made the dressing. Mix the dressing well and pour over all salad components. Mix very well and don’t worry about smooshing the avocado…that’s the point! It makes the whole dish creamy and rich. Serve with meat or scoop with pita bread.

    Thank you for this recipe, Christina! It was soooo delicious, I made it 2 nights in a row! It is the perfect salad to go with a blacked Ahi Tuna Steak I make.
