Faux overnight oats (grain free)

1 container of oikos organic greek yogurt (about 1/2 cup)
1/2 banana, chopped
3-4 strawberries, chopped into small pieces
1 tbsp chopped walnuts
1 tbsp flaxmeal (ground flaxseed)
1 tbsp Salba (ground white chia seeds found at Whole Foods. Or you can use whole chia seeds – you can also sub an extra tbsp of flaxmeal)
5 drops liquid stevia, or your choice of sweetener
3 tbsp of milk (I used chocolate almond milk)

Mix all ingredients together in a big bowl, and cover. Store in refrigerator overnight. In the morning, mix up and top with your desired granola or nut butter! I put grain free granola on top.

    Made this last night and ate it for breakfast this AM! Subbed blackberries for the banana, and I didn't have walnuts so I used 1 Tbs unsweetened shredded coconut instead. Worked great though you're right that it was very thick, I think next time I might increase the almond milk and decrease the yogurt.
