Sangita's Nepali dipping sauce

This is a recipe from my good friend Sangita. She is from Nepal and made this for me once…I never make it as good as her, but I LOVE this stuff!!

2 cans diced roma tomatoes (fresh is better but I use what I have)
1/2 white onion
1 tsp tumeric
1 tsp chili powder
1/2 tsp coriander
1/2 head of fresh cilantro, de-stemmed
1 tsp garlic

Saute garlic and onions in some EVOO until translucent. Add diced tomatoes after draining and add some salt to get the tomato water out of the tomatoes. Add tumeric, coriander, and chili powder to simmering tomatoes. Simmer until most of the water is out of the tomatoes and then allow to sit and cool slightly. Pour over fresh cilantro in blender and a dash of ground sesame seeds (I don’t have any) and blend until cilantro is completely combined. Use as dipping sauce for dumplings, bread, chicken…anything!
