Sangita's Nepali chicken salad
This is another recipe from my Nepali friend Sangita. I can never make it as good as her, but I still love it!! Here’s how I make it:
3-4 chicken breasts, boiled then shredded
1/2 purple onion, chopped finely
1/2 head of cilantro, chopped finely
1/3 cup lime juice
1 tbsp chili powder
salt and pepper
garlic or garlic powder
Combine all ingredients and allow to sit for 15 minutes so the chicken absorbs the juice. Enjoy!
