Garlic olive sole
1 lb of sole, frozen and defrosted or fresh
Sauce:
2 tbsp olive oil
juice of 1 lemon
1/2 tsp crushed garlic paste
1/4 chopped green olive
Saute or grill sole so it is cooked to your liking. I cooked it in about 1 tbsp of olive oil, then put it aside. In the same pan, with all the sole bits, I added the olive oil, lemon, garlic, and olives over medium heat. I let them all soften and meld together. Then I poured the sauce over the sole! I added some green beans to the pan to soak up any extra garlic sauce and briefly sauteed them.
