Zucchini “potato” salad

This recipe is based off my fiance’s mom’s potato salad…you could certainly make it with white potatoes! To make it paleo, use zucchini.

2 medium zucchini (I used one huge one)
3 tbsp extra virgin olive oil
1/4 cup balsamic vinegar
2 heaping tbsp of sundried tomato paste (or blended sundried tomatoes)
1 can of can artichoke in water (drained)

Cut zucchini into “potato” bites – about 1 inch pieces. Preheat your pan on medium heat and put 1 tsp of oil of your choice. Add chopped zucchini and saute for about 5 mins. Should not really get colored, you just want to tenderize it. While the zucchini is sauteing, make the dressing with all of the other ingredients. Cut artichoke into 4 pieces or as small as you like. Throw zucchini into dressing and serve warm or cold. It’s great both ways!!
