Pumpkin “granola” bars
Dry ingredients:
1 cup of almond flour
1/4 cup chopped walnuts
1/4 cup chopped pecans
sprinkle of salt
1 tsp cinnamon
1/4 tsp ginger
1 tsp pumpkin pie spice
1/4 cup raisins (optional)
1 scoop of protein powder (optional)
Wet ingredients:
2 heaping tbsp of pureed pumpkin (I used canned)
2 eggs
2 tbsp coconut oil (melted)
2 tsp of honey (more if you want it sweeter)
First mix all dry ingredients together and mix the wet ingredients separately. If you worried about the coconut oil hardening, you can add that last to the batter. Mix wet and dry ingredients and then place in an 8×8 pan (sprayed with cooking spray) and bake at 350F for 30 mins.
