Kabocha pumpkin pie pancakes
These are PHENOMENAL. Best pancakes I’ve ever made. The base recipe is my protein pancake recipe, but here is specifically what I used – you can add whatever “flour” component you want.
1 serving
1/4 cup old fashioned oats
1/4 cup low fat cottage cheese
1/4 cup egg whites
1/2 scoop Jay Robb protein powder (i used chocolate but you can use anything…vanilla would be better)
1/2 tsp baking powder
1/3-1/2 cup of cooked Kabocha pumpkin
1/2 tsp pumpkin pie spice
Blend all ingredients until well mixed in a blender or Magic Bullet. Makes about 3 medium pancakes. I topped them with 1 tbsp real maple syrup and some strawberries.
